Hey! Thanks for reading. Actually, I said that I like saying kumquat and loquat out loud - I understand that they are different fruits. I was just riffing on their phonemes. Níspero is the Spanish word for loquat. Kumquat is quinoto or kumquat in Spanish. Hope you try out the recipe though, because it is quite tasty. I prefer using kumquats in cocktails or preserves rather than cakes.

just a note; I was reading your recipe and in the beginning you comment on the name loquat and kumquat as being the english and spanish names of the fruit. through my research i have found that there is alot of confusion about three kinds of fruit. ill elaborate,first is the loquat,also called japanese plum.this variety has big shiny brown seeds. second is the kumquat, this fruit is sectioned off inside like citrus, with small white seeds, third and last is the japanese medlar which has redish purple fruit like a plum. i think the confusion is the name japanese medlar and japanese plum get mix up. none the less, all three of these fruits are very differant from one another but are all very suitable for consuming fresh or baking. hope this helps. dawn;

I like the idea of roasting the ingredients - when my boyfriend showed me the "original version" for huevos estrellados, with shine in his eyes, I thought oh no, fried stuff again. I actually never made it then, maybe he would like the roasted version as well? :) We are talking about a Spanish man here!

Thank you so much for this recipe online. I always make pies for family gatherings. I make some tried-and-true, and always a random one from the book (my pie bible!). This year the newcomer was the chocolate chiffon pie... and I was stuck on where to use the gelatin. So I googled... and was brought here. Thank you so much for saving me from certain disaster! (I wrote it into my book so I will know for next time!)
